I have been trying to find a good portable intray as I
travel a lot.

To date I have looked at Davidco's folder (a bit on the thin
side - as
I typically given some large documents ), and I have a
Dalvey coin tray
(too small but a good idea  see

Ideally it would fold flat (like the dalvey) to be popped
into my
briefcase after inbox=0

Any ideas?

I would go with the simplest thing possible - an envelope!

Or, if an envelope is not quite enough, get an accordion folder, with an attached elastic loop. ; You can even get them with dividers so you can do some sorting right within the "inbox".  First compartment is "in".  Second is "file".  Third is "read".  Forth is "delegate".  Etc.

I use a hair band around a notebook.  Unlike rubber band
they don't
perish.  If I am carrying a Moleskine the band is built in. 
If it is
too big to go inside the Moleskine the band holds it to the
outside.
You can colour co-ordinate too

I bought the briefcase folders from Levenger, and find they
are
perfect for a mobile Inbox.  They give you 10, so I also use
them for
a To Work/Home carrying folder, to hold some reading
material (small
print outs only), hold mtg notes & reference items that
I still need
to transfer to electronic format, and finally a Project
Support
Material folder for whatever project-related material I
might want to
carry around with me.  They're color coded for quick
identification,
and made of a sturdy plastic that is easy to apply &
replace Brother
labels.  Can't recommend these highly enough.  Fits easily
into a
briefcase, folio, or laptop bag, and their double sided
pockets keep
everything in place.  Check them out if you get a chance.

Ideally something that folds flat in my briefcase that I can just pop-up (or something similar) when I get a flat surface at a hotel desk or the like.

Whilst on the move in car/plane i just capture in my moleskine and throw that into the inbox when I hit some real-estate

    What do you use your empty briefcase for in the hotel
room?  Once your 
files/laptop/contents are out, you have a big empty box with
a folder set 
above it, right?  Use that for your inbox and process
through until your 
briefcase is empty and then load it up for the next day.

    Of course, it only works where you can actually spread
out (i.e., hotel 
rooms and possibly airports, depending on how comfortable
you are with 
placing things around you).  But it sounds like that's what
you're looking 
for.
