Hi,

there's any way to put a limit for the maximum number of
attachments in 
an email (like $MAXFILES for archives)?

No, it is not available. You may only limit the total mail
size.

Quotas like $MAXFILES, $MAXLEVELS, $MAX_EXPANSION_QUOTA etc.
are mostly
intended to protect virus scanners from mail bombs, and not
to protect
recipients from excessive contents.
