Hi,
The Audacity software is specifically designed to convert my
recorded
vinyl to MP3 files. The vinyl origin of the recording is
actually
incidental. 
My question is really, how I can adjust the volume of the
converted
music file so that when converted to MP3 it matches the MP3
files which
I have downloaded from CDs?

You need to set the input volume on your computer's sound
control software. 
The mp3 output from Audacity will be  the  same basic
loudness as the input 
signal..

Listen to the input through your recording and look at the
Audacity 
waveform. If that level is loud enough, make your
recording.

Next, before converting the recording to mp3, youmightt
consider using the 
"Normalize" effect under the effects menu. This
will "balance" the relative 
loudness of the file. It might also boost the level.

I usuall do a "NOrmalize" as the last function
before the file export.
