I am using audacity hard/software to record vinyl discs to my computer and thence to CD.
However, thus far I have only been able to record each side of an LP disc as one track, rather than individual tracks. When transferred to CD, the recording plays as one single track. What am I doing wrong?

Nothing.  This is a limitation in Audacity.  You're doing everything 100% right.
 
To solve the problem, you have to manually 'mark' the tracks AFTER you've recorded them, and then use Audacity's "export multiple" function when burning to CD.  This function creates a separate WAV file for each track.  There is no other option other than to use another product besides Audacity which senses silence on the input and automatically marks or creates a new track/file.  Audacity lacks this important feature.  There is a comprehensive writeup/web page on this exact subject in the Audacity documentation.  Please post again if you are unable to find the documentation.
