You can in Thunderbird change which folder it uses so you
can use Sent,
Sent Items, or whatever you'd like. The same for the Trash
folder I
believe as well.

The server side contacts are only accessible through either
the WebMail
interface, or through the MAPI connector. Though Stalker
has said in
the past that they would have a version of the MAPI
connector for
Entourage, as of now it is only for Outlook for Windows.
If you want Server-Side address books you'll have to use
LDAP (for a
system wide address book, not for individual address books).
We don't
use server side address books here so unfortunately I can't
help you
with the LDAP specifics.
