Using "bs=512b" worked. I booted to the new disk
and everything looks ok. I
also ran "fsck" in single user mode, which
indicated no problems. Can I
assume everything is ok, or is there anything else I should
check?

I'm sure it is ok, but I'd double check the output of fdisk
and
bsdlabel.  You've got some extra space now and you may want
to use it.
Read the handbook on moving to a larger disk.
