How big is the organization? What do they run presently?
What features
do they need in a mail server? How big/experienced is the IT
staff?

If you're not familiar with mail servers Postfix is likely
to be much 
easier to setup and admin. Otherwise the netmail ebuild
supports less 
features than the current qmail ebuild.
