It is always possible to track anything sent over the
network,
particularly if you are behind a corporate firewall/proxy.
Difficulty wise, I'm not sure if the Google Talk client
connects over
SSL by default or not (I would guess it does), but I know
that it is
possible to use a different client (such at Pidgin) to
force
everything to be encrypted. Doing this makes it far more
difficult for
the conversation to be understood, but still does not
guarantee that
your conversations are safe. Always be cautious about what
you say
online.
