Need help setting up a LAMP server

I'm looking for some help setting up a small web server. 
The server 
will host a few low volume and prototype sites. I'm also
looking to this 
to be a learning platform for me.

In addition to the basic LAMP components, I want a few other
items as 
well to include Java, mail support, and a hosting management
tool.  I 
have hardware already to go.  I will be running it out of my
home office 
space.
