We use SecondCopy (www.centered.com) to copy customizable "profiles" of folders and documents that are then copied on whatever schedule is specified to an external hard drive that we swap out every month to an offsite location. SecondCopy will let you do incremental copies and complete ones and you can set up multiple profiles, each with different characteristics. I think it works pretty well from Win XP administrator level network accounts but have had some trouble getting it to run reliably on a more restricted account (this is probably the way it was installed and how the original profile created - I've spent almost no time trying to fix it).
