The volunteer management app is a separate appexchange plug-in and therefore has its own documentation. Also, the documentation for Salesforce itself is very difficult to navigate for a nonprofit that has made significant customizations to their Salesforce instance to get it work for a nonprofit (our users get stuck looking for "Accounts" when we've renamed that to "Organizations" for example). Salesforce is amazing, we love it, but you have to go into it knowing that you are making a round peg fit in a square hole since it wasn't designed for the nonprofit. And if you ask support for something that is specific to a nonprofit (such as volunteer management), support won't be able to offer much support.
It's just one of the downsides of having an incredibly powerful CRM for nothing.
