    In my experience managing both McAfee & DeepFreeze,
McAfee should be
configured to do the autoudpdates during the day so you
shouldn't have to be
concerned about it being the most up to date.  Even if the
pc is frozen, it
can still run the update with the only issue being that the
updates will not
be there after the next reboot.  McAfee doesn't release .dat
files each
hour; instead, I think they're issued every couple of days.

DeepFreeze can be configured to unfreeze itself during a
specified time in
order to do update.  We had ours set to unfreeze itself at 2
am to do
WindowsUpdate & McAfee updates.  So the 2 scenarios you
are faced with are:

1.  either the pcs stay frozen during the day & do the
McAfee updates (which
are lost upon reboot)
2. or configure DeepFreeze to unfreeze at some point when
the pcs won't be
used & configure McAfee to update then.
