Write this macro & keep it in your Personal.xls:
  Sub CenterAcrossSelection()
    Selection.HorizontalAlignment = xlCenterAcrossSelection
End Sub
  Right-click a menu item or toolbar, select Customize
  right-click the current Merge & Center toolbar button,
select Assign
Macro, point it to CenterAcrossSelection macro (above). 
  That ought to do it!
