Found out that once you get your account set up, there is an option
of whether or not to leave mail on the server. So I can leave my mail
on the server, check on the iPhone, and then pull all mail off with
Eudora and that will take the mail off the server permanently.

Now if I could just figure out how to remove the list of
previously-typed addresses when sending mail. I made a typo in trying
to send a test message and that incorrect address now shows up in the
list when I try to type the correct address (I got the last letter of
the .com address wrong, aargh...)

In Apple's Mail program (not on the iPhone, I don't think) under the
Window menu, there is a "Previous Recipients" list. Open that list
and find the erroneous email address and delete it. It should stop
trying to show up.
