No, it only applies to all addresses linked to that user, on
that user's screen.

Depends on if you have auto-creation turned on.
All email tries to match a user domain, then domain,
and then the . catchall,
and will follow the directions of the first match.
By default, email that does not match a domain or address in
Maia will pass through.

Yes... sorta. There is a catch. You can start out with a
domain and have all
email go through it, and then hand off user domain to
trusted people as needed.
The one exception is the ., which will only catch
items for non listed
domains/addresses if you change "Should the System
Default user ( .) only catch
mail for local recipients?" in the system config to
"no" ... *which also
catches outgoing email.*
The only way that Maia knows an address is "local"
is if there is a domain
defined or the full address is defined. And if mail comes
in for
a example.com, it still thinks example.com is *not*
local even if there is a
b example.com but no a example.com or example.com.
So the best route is to always define your domains.

the CLI tool maiadbtool.pl can add multiple domains
quickly...

That I can see being useful.
