So, just to be stupidly clear:

My MM setup is an inbound-only gateway for our single-domain
Exchange box - the Exchange box currently delivers mail
directly to outside recipients. If I set 

"Should the System Default user (.) only catch mail for
local recipients?"

to "Yes", and point my Exchange box at MM as a
smarthost, MM will not filter/quarantine/discard mail from
my Exchange box, it just adds a hop to it going outbound to
the world.

If I'm correct in my description (and correct in my setup
otherwise), this would negate the need for me to fiddle with
two instances of postfix on my box, and all the folderol
that goes with it.

That would be most cool.

Essentially, yes.  Filtering policies (and associated
quarantining
actions) are bound to recipient addresses and domains, so if
the
recipient address of an email matches an address or domain
that Maia
knows about, it will be subjected to the appropriate
filters.  Mail that
does /not/ match any known user addresses or domains falls
through to
the System Default (.) account, and is subjected to /that/
account's
policies.

If you don't want that mail to be filtered or quarantined,
you just need
to configure the "." account to pass everything through
(i.e. disable
filtering of all mail types).

In other words, Maia will only filter mail for users and
domains that it
knows about; everything else (typically outbound mail) falls
through to
the catch-all "." domain, which you can configure
any way you like.
Many sites don't bother filtering outbound mail, so they
leave the "."
account configured to pass everything through.  That said,
it can be
useful to filter outbound mail at the very least for
viruses, in case a
machine on your network becomes infected and tries to spew
malware outbound.
