Get your new computer setup. Give the new machine a 3rd IP address, do all OS
updates & copy over the whole /surgemail directory, then run the
SurgeMail Update program. Turn off the machine
until 1am or 2am local time.
At 1AM or 2AM local time, Shutdown
the old Surgemail server.
Turn on the new computer and add the old IP to the
new machine and you're live.
Should take about 5 minutes off-line. No missed
emails because incoming emails will be retried.

Generally no, although I'm not sure exactly what
you expected it to do in this layout so it 'might' do something useful, but
certainly not bi-directional mirroring no.
