1.
Unsharp Mask is a specific form of making the photo sharper. If your
in-camera setting specifies High Sharpening, then you probably won't
want to sharpen any more. I prefer to turn OFF in-camera Sharpening,
and then apply it with Photoshop. The Photoshop Sharpening algorythm
is more sophisticated.
2. For Photoshop to read RAW (NEF) files, it requires a special
addition named Camera Raw. This can be downloaded from the Adobe
site, pay attention to which version you download, depending on
which version of Photoshop you are running.
When installed, you get a special NEF-processing screen from Camera
Raw, after which you notify Photoshop to transfer you and the shot
together to the standard Photoshop screens for continued processing.

Do you have a manual? If not, under Shooting Menu, go to Optimize
image, then to Custom, then to Sharpening and choose 'None' if you want
no sharpening.

You've expressed that you shoot only in RAW, so your in camera sharpening
settings do not matter. (The in camera sharpening settings only affect the
JPEG that the camera creates in camera.)
You would choose the sharpening setting that you want to use for any
particular image in ACR/NX/Bibble or what have you as part of your workflow.
I've found that I do just fine using a more aggressive default setting of
65 sharpening in ACR as part of my standard workflow. Many folks(who may
know better than I) recommend not sharpening at all until the photos are
resized for printing. I don't resize my photos for printing, my lab does
this so I sharpen and adjust for noise, white balance, white point, black
point, gamma, calibration, etc... all in one step in ACR. I just keep them
in their original NEF resolution 3008X2000 (or 3872X2592) pixels at 300dpi
when I make the compressed to '10' Quality JPEG copies of my finalised DNG
files.
If you aren't a 'professional', showing any and all work to anyone online
would be fine and dandy if you want to adopt that as your 'style', but as a
professional photographer, the market judges how 'good' you are based on
your /weakest/ work (always comparing it to the best that they themselves
have ever happened to have produced) so why show anything but your absolute
best to a critical customer base just looking for an excuse to say "I could
do something THAT good...why would I buy that?!"?
