Not unless you want to save a "default" document of that type. For
instance I have a custom default document for printing directly on CDs.
See my earlier post on how to do that. It's just a matter of naming the
document and checking "Remember."

I can relate. I have a couple of envelope documents set up that way, but
I don't use them any more. But I occasionally just change the addressee
information of them when I want to make an impression.
Hope you're canceling those "lost" payments. I have a friend whose
landlord always gave him that line, but the landlord was just
conveniently "losing" them so he could get "paid" twice. Or the landlord
would demand cash so that he could ask for the same payment again. My
friend got so sick of it, he moved.
