You'll probably need at least two video cards.  If your
motherboard has a built-in VGA, you'll need a separate
PCI[X] card for the other heads.  Most PCI video cards I've
seen comes with a DVI port, a VGA port, and an S-Video port.
 There are DVI-to-VGA converters out there.

Go for nVidia cards.  So far, they're the best supported
video card in Linuxland, as per my experience.  ATI cards to
work too, even using the open source drivers.
