The graphics card built into my motherboard (VIA K8M800)
doesn't seem
to be very Linux-friendly.

If I buy a seperate graphics card, how do I install it?  Do
I have to
reinstall Ubuntu?

I haven't personally done this (but am thinking of it). I
would expect
you'll just need to reconfigure the software:

sudo dpkg-reconfigure xserver-xorg

That should work.

Can't you just edit xorg.conf and change the
Driver          "nv" (or whatever)
line? Or is there more to it than that?

I'm assuming the OP would want to make some other changes,
like
resolution or enabling some modules. Dpkg-reconfigure steps
you
through all the options quite nicely, in a newbie-friendly
way, and
presents reasonable defaults. Well, usually.
