I have always preferred to work without instant formatting:

it is faster (no computer processing involved when adding
references)
it is easier to manipulate the reference once you learn the
rules:
many people on this list have had difficulty permanently
removing the
author from their in-text citation - you can do it manually
and easily
without instant formatting
you can easily prepare multiple references 

I don't need to see the reference list until I run the
bibliography.
As you have mentioned, the other way to address this request
is to place
the reference list that builds as you use CWYW, should you
wish to use
it, at the end of the document. 

As previous people have posted recently, I also believe
Endnote needs to
make these rules easier to find - I can't tell you how many
times I've
printed this page from the Endnote user guide so colleagues
can
manipulate their own references!
